ANALYSIS OF THE CONTENT OF SUGARS AND HEALTH-PROMOTING SUBSTANCES IN THE SAP OF SYCAMORE MAPLE ACER PSEUDOPLATANUS L. IN THE NOTEĆ FOREST
The growing popularity of products based on tree sap is based on the presumed health-promoting properties of this raw material. Also, the maple syrup market, which is mainly represented by Canada, is recording a steady increase in the size and value of production. The study attempted to expand the knowledge regarding the content of sugars and health-promoting substances of syrup of sycamore maple Acer pseudoplatanus L. on the territory of the Promotional Forest Complex "Noteć Forest" by collecting the sap in the period 05-08.03.2022 and analyzing individual compounds in the groups: sugars, antioxidants, preservatives, mineral compounds. A low content of sugars and health-promoting substances was found, conditioning the study area to be unattractive for economic use of sycamore sap. In addition, the amount of manganese was found, which can have negative effects on human health with regular consumption.
